Millocchio Rosso stammt aus den alten Weinbergen von Ranchelle \u2013 einem Gebiet mit dem Namen \u201eMillocchio\u201c, da es fr\u00fcher vollst\u00e4ndig mit Weinbergen bedeckt war. \u201eMillocchio\u201c bedeutet auf Italienisch \u201etausend Augen\u201c und bezieht sich auf die zahlreichen Knospen \u2013 auch \u201eAugen\u201c genannt \u2013 der Rebst\u00f6cke. Diese alten Weinberge bewahren ein seltenes genetisches Erbe traditioneller maremmanischer Rebsorten wie Alicante, Ciliegiolo, Sangiovese, Mammolo, Buonamico, Malvasia Nera und Aleatico. <\/p>\n

Die Trauben werden von Hand gelesen und verg\u00e4ren spontan \u00fcber einen Zeitraum von drei Wochen. Nach der G\u00e4rung und Pressung reift der Wein ein Jahr in Eichen-Tonneaux und gewinnt dabei an Tiefe, Struktur und Komplexit\u00e4t, ohne einen \u00fcberm\u00e4\u00dfigen Holzeinfluss. <\/p>\n

Die Vinifikation von Millocchio Rosso folgt strikt der Philosophie der nat\u00fcrlichen Weinbereitung: Es werden weder Hefen noch SO\u2082 oder andere Zusatzstoffe hinzugef\u00fcgt. Daher ist dieser Wein vollst\u00e4ndig vegan. <\/p>\n
